Here’s what’s on our plates in 2007

Jane Walsh, Spokeswoman for The Chefs’ Warehouse, a national supplier of specialty foods:

Operators are standing by: “An interesting piece of equipment that chefs are telling they love is the Thermomix. It chops, juices, blends, and purees, and it will steam or heat the food if you want.”

Exotic foods: “We have our eye on several countries that will be supplying us with unique, high-quality food products in 2007. From Japan we’ll get handcrafted soy sauces and soy products. And Chile will be a great source of super-fresh, all natural items such as oils from olives, apricots, and avocados, and a wonderful smoky spice called merken. Some of the smoked salmons from there are wonderful. And we’re looking at bringing in baby pears.”
